Plucked and Dressed Partridge

Dry plucked by our master butchers, dressed partridge are a perfect bird for a Sunday roast. Partridge is juicer than pheasant but can still have a slightly dry texture so cover with fatty bacon or foil when roasting to lock that moisture in. Will serve 1 so a brace is perfect for 2.
